Safranal does not exist directly in fresh saffron stigmas; instead, it develops during the drying and storage processes. The main precursor to this compound is picrocrocin, which converts into safranal through enzymatic and thermal degradation. Consequently, saffron dried using proper, controlled methods exhibits a stronger, more lasting aroma.
